Hey Y'all! The official kick-off to summer is almost here, and I am so excited! I love so many things about summer: picnics and cook-outs, flip flops and sandals, sipping sweet tea, and fresh veggies from the garden. One of my favorite sandwiches for munching on the deck is a homemade pimento cheese sandwich. It is like Sunshine on Bread. This is my version of a Southern favorite.
INGREDIENTS
one and a half lbs of Velveeta Cheese, cubed
eight oz bar of cream cheese, cubed and softened
one cup of Hellman's Mayo
One large jar of diced pimento, drained (chopped fresh pimento if you prefer)
In a large mixing bowl, combine cheeses and mayo. I use a stand mixer with a whisk to do this.
Mix thoroughly till smooth, and then add pimento and blend into the cheese.
Add-ons
Any of these will add variety to a basic spread: chopped celery, onions, or chopped nuts, sweet pickle relish, or crushed pineapple.
