Kentucky Chicken

It is no secret that The Colonel loved fried chicken. Most Kentuckians love chicken.  We like it grilled, fried, bourbon-glazed, in casserole, burgoo, dips, and of course, chicken salad. When I was a young girl, my Mom made a version of this chicken salad for special occasions. She served it with blueberry muffins, and it was delicious. I have served this at piano recitals for my students and their families.  Nowadays, I serve it a lot for Gene and me. I call it Festive Chicken Salad because every day should be celebrated !!! By the way, Gene is an official Kentucky Colonel, and he definitely loves this recipe!

Festive Chicken Salad

2 large Chicken Breast

1 cup of chopped celery

1 cup of chopped pecans

1 1/2 cups of sliced grapes

1 chopped apple

dressing

1 cup of Mayo

1 cup of sour cream

2 tablespoons of honey.

In a medium sauce pan boil the chicken breast until done.

Remove from broth and place on a plate to cool completely

Shred the chicken breast by hand and place in a large mixing bowl.

Add celery, pecans, grapes, and apples.

For the dressing combine mayo, sour Cream and honey and whisk until fluffy.

Pour over the the chicken mixture and stir until well blended then chill

This is great served with pita bread, croissants, or muffins. ENJOY!
